Why go
Rincon Escondido does not open its doors every day. The house says it plainly: it is not a restaurant. It is an ecosystem around the parrilla, started in 2014 by Alan Edelstein and Francisco "Chico" Mancuso, two former Johnson & Johnson commercial executives, in the back of a house on Rua Madalena. There is no open dining room and no à la carte menu. Each dinner has a date and a fixed menu announced in advance, tickets are bought on the website, and guests leave without a bill to pay. The tradition is Argentine and Uruguayan, and guests are shown how the fire is fed and how the cuts go onto the embers. Money Times named it on May 2, 2026, among 11 places for premium meat in São Paulo.

02The beef
The sources name cuts, not herds. Bife ancho from Angus is on the seven-course menu. Among the six rotating menus Bloomberg Línea lists dry-aged beef, meat from mature cows, wagyu and vegetarian options. Cara Preta (meat), Trivento (wine) and BR Spices are named as commercial partners. Breed, origin and days of aging are not published for each menu. The number: R$ 569, the top price listed.
03The fire
The house's emblem is La Poderosa, an Argentine-style grill built with the manufacturer LarGrill. The method is the Argentine and Uruguayan parrilla, and the embers are part of the service. The fuel, wood or charcoal, is not stated in any source consulted.
04The story
2014: the project starts among friends. Bloomberg Línea reports more than ten years of activity, annual growth of 50% and an EBITDA of 28%. In 2024 a second venue opened for corporate events, on three floors, for 40 to 100 seated guests or up to 150 at a cocktail. The website now names it Parrilla Panamby, in Morumbi, for up to 120 people at corporate events and up to 200 for celebrations. Mancuso also fronts a parrilla series, "La Vida Es Una Sucesión de Asados", on VIX: 16 episodes over two seasons.
