Why go

Bidoche works two French breeds, Limousine and Bazadaise, and sells them twice: over the counter by the kilo, and in a small restaurant hidden at the back of the shop. At the table you pick your piece in the butcher's display, at the weight you want, and pay by weight, with sauces and sides included. Its most-cited plate is the owner's 300 g / 11 oz steak, from a Limousine cow about ten years old, aged 45 days and then left 48 hours in a virgin olive-oil marinade; Time Out described it in 2020 and again in its June 2026 guide to Paris meat restaurants. The owner, Alexandre de Toulmon, left banking to train as a butcher.

  • Charcuterie board€9 in 2017, for two to four people.
  • Œuf mayonnaiseThe starter Le Bonbon singled out in 2025.

02The beef

The house says it chose Limousine for its tenderness and marbling and Bazadaise, a much rarer breed from around Bordeaux, for its very fine grain. For each breed, it says, weight, age, feeding and aging are agreed with the farmers, and it refuses animals whose growth has been artificially accelerated. The 300 g / 11 oz steak comes from a cow about ten years old. Veal is milk-fed and raised with its mother; in 2017 the lamb was pré-salé from Mont-Saint-Michel. No source states whether the 45 days are dry-aging. The number: 45 days.

03The fire

In 2017 Sortir à Paris described the chosen piece being weighed, grilled and brought to the table. No source names the fuel or the grill.

04The story

Bidoche opened in September 2017 at 7 rue Jean-Pierre Timbaud, in Oberkampf, with the butcher's counter at the front and a restaurant of about 30 seats down a corridor. Alexandre de Toulmon studied at a business school and spent about five years in banking, by the house's account, before training as a butcher; Time Out names Boucherie Roger and Hugo Desnoyer among his teachers. A second shop and restaurant, Bidoche Batignolles, is listed at 46 rue des Dames in the 17th.
