Why go

República del Fuego suits the evening when you want a proper parrilla without ceremony. The house still has its original floors, a deck on the sidewalk and a covered patio at the back, with room for 64 according to Perfil in August 2026. The Michelin Guide gave it a Bib Gourmand, its mark for good value, in 2024 and 2025, and kept it in the 2026 guide; Perfil lists it among that year's recommended restaurants, while Time Out says the Bib Gourmand was renewed. Michelin describes a casual, youthful room, and a 2024 Buenos Aires guide notes a young crowd and a bar open until 2 a.m.

01What to order

02The beef

The sources speak of premium cuts and of a menu that changes often, but none publishes the breed, the feeding, the estancia or any aging, so Steakpedia leaves those out. What you can count on is the parrilla's classic range, entraña, vacío fino, bife de chorizo and asado, with offal and house croquettes alongside; sides for the grilled meat come separately, Michelin notes.

03The fire

Everything is cooked over embers, Perfil reports, and the embers reach the pastry section too, which is how the grilled pears happen. No source names the wood or charcoal.

04The story

Chef Gabriel Pérez trained at CECSA, the Centro de Estudios Culinarios San Antonio, and a partner named Juan speaks for the house. The kitchen runs a series called Fuego Compartido with guest chefs: on Sept. 22, 2025, it served a seven-course seafood menu with Matías Kreiman, at ARS 85,000 per person over three sittings. The Michelin Guide included the restaurant in its first Buenos Aires edition, in 2024, and 2026 is its third year in the guide.

05The practical

Juncal 2682, Recoleta, on the residential stretch toward Palermo. Evenings carry the full menu, and on Sunday lunchtime the house switches to a family-style format, Perfil says. Michelin lists it at $$ and says the restaurant takes its own reservations; Steakpedia found no published hours or menu prices, so book ahead and ask when you call.
