Why go01

Fat Belly is built on secondary cuts. Flat iron. Onglet. Denver. They come straight from producers in several countries. They cook over charcoal embers. It started small: ten stools at the back of an ice-cream shop. Now it is a full room at Serene Centre. Steaks on the May 2024 grill list ran S$28 to S$65. One thing to clear up. Some aggregators showed it as temporarily closed in 2025. A 2026 note says that is out of date. FBG and Fat Belly are the same restaurant.

02What to order

03The beef

The owners buy direct from producers and breeders in several countries. The menu rotates. The labels change; the idea holds. Lesser-known cuts, named by farm and marble score. In 2019: Mayura wagyu tri-tip at S$55 and Stockyard wagyu onglet at S$38, per 200 g. In 2022: 2GR full-blood wagyu Denver MS 6/7, Jack's Creek F1 deckle MS 4/5 and an Argentine grass-fed Rioplatense ribeye. In May 2024: grass-fed ribeye at S$36. In 2026 the group ran Butcher's Secrets workshops at Market Bistro. They compared wet-aged with 30-day dry-aged wagyu, and steaks aged with wine, bourbon and rum.

04The fire

Every steak goes over binchotan, Japanese charcoal. The grill and its fire are in view from the bar. One fuel. Secondary cuts. A short list of steaks.

05The story

It opened in 2017 as a ten-seat steak bar, speakeasy style. The stools sat at the back of Sugarhaus, an ice-cream shop in Serene Centre. Nights only. The founders were Stanley Seow, the chef-owner, and his wife Andryl Seow. A 2019 renovation took it from 10 to 52 covers. In 2022 City Nomads reported a rename to FBG; the website still says Fat Belly. Victor Loy was executive chef by 2022 and leads the Fat Belly Group kitchen in 2026. A sister restaurant, Market Bistro, is at Marina Bay Financial Centre Tower 3.
