Burnt Ends

My passport

Ironwood burns in a four-tonne, two-chamber oven, and the whole kitchen turns around it.

Why go01

Wood runs this kitchen. The oven sits at the centre of an open kitchen. Four height-adjustable grills stand beside it. The World's 50 Best puts them above 925 °C. Steaks go on with fire alone: no salt, no pepper, no oil. The oven also decides where Burnt Ends can go. In 2024 it dropped a Harrods outpost in London, because the wood ovens could not go into the protected building. The lists keep up. One Michelin star in the 2026 guide, in a run the house dates to 2018. No. 9 in the World's 101 Best Steak Restaurants 2026, the highest in Singapore.

03The beef

The steaks are aged in house. The menu is rewritten every day, so cuts come and go. Blackmore wagyu striploin is the constant. Onglet, OP rib cap and flat iron keep returning. The 45 days on the rib cap is a 2024 figure, not a fixed house rule. Prices go by weight: S$140 and S$150 a kilo for the 2024 cuts.

04The fire

The oven is custom. Four tonnes. Two chambers. Its design crosses the Italian wood-fired pizza oven with the ovens of Asador Etxebarri. It was sized to take a whole suckling pig, kid goat or milk-fed lamb. The fuel is ironwood, a Queensland hardwood. It burns hotter and for longer. Next to the oven, four grills adjust in height over the coals.

05The story

It began in London as a pop-up called Burnt Enz. Dave Pynt pitched it to his partner Loh Lik Peng, who had suggested yakitori. Pynt is from Perth. He cooked with Nuno Mendes in London, René Redzepi at Noma and Victor Arguinzoniz at Asador Etxebarri. Burnt Ends opened in 2013 in a Teck Lim Road shophouse. In 2021 it moved to Dempsey Hill, into a room about twice the size, designed by Emma Maxwell. The 2024 book, Burnt Ends, runs to about 368 pages and 70 recipes. For its 13th year, in 2026, it hosts four guest-chef nights.

06The practical

#01-02, 7 Dempsey Road. Dinner Tuesday to Saturday, 6 to 11 pm. Lunch Thursday to Saturday, noon to 2:30 pm. Closed Sunday and Monday. The booking window is short, and tables are hard to get. MissLobang puts dinner at S$150 to S$250 a head. Besides the bar and dining room: a private room for up to 16, the Study Room, a cocktail bar, Burnt Ends Bakery and Burnt Ends Cellars. Book the day it opens.
