Swift & Sons is Boka Restaurant Group's steakhouse in the old Fulton Market Cold Storage building, opened in October 2015. It is named after Gustavus Franklin Swift, who built a meatpacking empire in the Midwest. The website presents Fulton Market as the place "where American steak was born". On the World's 101 Best Steak Restaurants list it is known for dry-aged USDA Prime, the strip and the porterhouse above all. It was no. 71 in 2025 and no. 73 in 2026. The Michelin Guide lists it as a steakhouse.

03The beef
The grade is the clear part: the Michelin Guide says the steaks are USDA Prime. At its 2015 opening the menu spoke of responsibly raised beef and a line of boutique cuts, Japanese A5 wagyu among them. No producers were named. Breed, feeding and the number of ageing days are not stated in the sources checked; dry-ageing is. The opening list gives the scale of the cuts. A 38 oz dry-aged côte de boeuf, a 36 oz porterhouse, a 24 oz bone-in ribeye and a 14 oz bone-in filet. Michelin adds that steaks are cooked at very high heat and come with three sauces.
04The story
The building was the Fulton Market Cold Storage warehouse. Time Out dates it to 1923; HPA, the studio behind the conversion, gives 1920 and credits the design to Gardner & Lindberg. Sterling Bay bought it in late 2012, and it had to be thawed for months before reuse. It now also holds Boka's Cold Storage restaurant and Google's offices. Inside remain the raw concrete mushroom-capital columns, high ceilings, stained-glass fixtures and marble mosaic floors. AvroKO's design imagines the headquarters of a fictional meatpacking company. Chef Chris Pandel has led the kitchen since opening, after The Bristol (2008) and Balena (2012).

1000 W Fulton Market, West Loop. Sunday 4:30 to 9 pm; Monday to Thursday 4:30 to 10 pm; Friday and Saturday 4:30 to 11 pm. Happy hour Monday to Friday, 4:30 to 6 pm. Book on the website or on 312.733.9420; there are private rooms for events. Tuesday to Saturday a bar cart mixes Old Fashioneds at the table, with tableside magic when available, and a sundae cart closes the meal. At opening the wine list passed 600 labels, 30 by the glass. The number: 38 oz.
