Ikka starts with one animal: Miyazakigyu, the Japanese Black brand from Miyazaki prefecture, bought whole rather than by the cut, per a 2023 Cafebiz feature with a promotional tone. The house displayed its certificate as a direct distributor at the front desk, and the menu covered the main cuts of a single animal: yakiniku first, raw wagyu in sushi and yukke, cooked wagyu over rice and noodles. Vietcetera listed it in October 2023 among Hanoi's yakiniku places for Miyazakigyu.

Japanese Black (kuroge wagyu) of the Miyazakigyu brand, imported from Japanese farms, per Vietcetera and Cafebiz. Buying whole means every cut, not only the loin: Cafebiz put a typical animal at about 500 kg, of which about 30 kg is striploin. The articles give no grade, age or ageing. The number: 30 kg in 500.
