The Innocent Carvery
For the dinner where the table wants to compare Wagyu rather than simply order it, The Innocent Carvery in Nishi-Azabu offers two ways to sit: a counter built as a lab, and a dining room where a concierge carves.

Why go01
Opened on 11 December 2015, the house presents itself as a yakiniku with a butcher lab run by a Wagyu specialist, and you choose your evening by where you sit. At WAGYU LABO, the counter facing the open kitchen, the courses are built to compare brands, origins, cuts and ageing; in WAGYU RESTAURANT, at tables and in private rooms, a Wagyu concierge carves the meat at the moment of serving and the staff grill. Tabelog has named it to its Tabelog 100 Yakiniku Tokyo list every year from 2021 to 2026, and on 17 April 2023 the house announced that it had placed sixth in Japan on World's 101 Best Steak Restaurants. On Tabelog it holds 3.75 from 980 reviews.

03The beef
The beef comes from a cellar of Wagyu chosen for the care each producer takes, and the house says brand and origin are a guide rather than the only measure. On the menu you will find Kobe beef, Japanese Black, Sendai-gyu and Ota-gyu, and the staff will tell you the day's origin if you ask. The kitchen also cures its own beef ham for a month.
04The story
The name, the house explains, joins two ideas: 'innocent', for treating the product with a pure attitude, and 'carvery', for cutting the meat without spoiling its character. There is a second house, The INNOCENT CARVERY Marunouchi, and the website also links to the sukiyaki restaurant Sukiyaki Jūniten.
05The practical
Tuesday to Friday it opens 17:00–23:00; on Saturdays, Sundays and holidays there is lunch as well, 11:00–15:00. It closes on Mondays, or on Tuesday when Monday is a holiday. Tables are booked on TableCheck, the counter by phone. Since 28 May 2025 children aged 10 and under are seated at dinner only in the 17:00 sitting. There are 55 seats, all non-smoking, and a private room for up to four. Tabelog puts dinner at ¥20,000–29,999 and lunch at ¥8,000–9,999, with 5 % service at lunch and 10 % at night, and no dress code. You will find it at Calha Nishiazabu 101, 1-4-28 Nishiazabu; booking ahead is the safe course.
