Why go01

The case for Smith & Wollensky Seoul is the ageing room. The house says it runs the largest dry-ageing room in Korea, with strict control of temperature and humidity, and its menu prints the number of days beside each steak. The full New York list made the trip: porterhouse, T-bone, bone-in New York cuts, a 1,200 g tomahawk. The wine list runs to more than 600 labels, mostly American.

03The beef

Two kinds of animal hang here. The core is USDA Prime, which the house places in the top 2 % of American beef; at the opening it named Double R Ranch and Snake River Farms as suppliers. The largest cuts, the tomahawk and the cowboy, are American Wagyu under the Winterfrost brand. All of it arrives by air from the United States and is stored, aged and cut by hand on site. The current menu gives 30 days for the porterhouse, T-bone and New York cuts, 35 for the bone-in rib-eye and 40 for the wagyu. The 2024 press release said 28 days at least, and Marie Claire Korea (February 2026) wrote exactly 28; Steakpedia follows the menu. Hanwoo appears once, in the bar's steak tartare. The number: 30 to 40 days.

04The story

Smith & Wollensky was born in Manhattan in 1977. The Korean house opened on 1 October 2024 with YJ Partners as the brand's official partner, led by co-CEOs Jong-Hoon Yoo and Hee-Sang Jeong. After London, and Taipei as its first Asian address, Seoul is the brand's second house in Asia. The name is also tied to the charity lunch auctions with Warren Buffett, which the brand says raised about US$53 million, US$19 million of it in the 2022 bid.

05The practical

The restaurant takes the 7th and 8th floors of 71 Dokseodang-ro (262-1 Hannam-dong), with a rooftop terrace on the 9th for events; Marie Claire Korea notes the view over the Hannam five-way junction. Five private rooms seat 6 to 8 each, 24 in all. The dining room opens 11:30–21:30, last order 20:30. Phone 02-6390-9880; the booking button on the official site opens its Naver Map page, and Marie Claire Korea reported a 10 % weekday discount for Naver bookings. Parking and valet are available.
