Steakpedia Advisory

Steakpedia Advisory helps restaurants, importers and distributors make decisions about beef with the same tools the reference uses: trade specifications, cut names across languages, and yields measured piece by piece. It shows which cuts pay once trim and aging are counted; it advises, and does not sell meat.

From invoices to measured yields

Most decisions about beef in a restaurant are taken from invoices and supplier price lists. Steakpedia Advisory brings measurement into them: which cuts actually pay once trim and aging are counted, which specification to write so the right piece arrives, and how to explain origin, grade and aging to guests without overclaiming. The work is practical and based on numbers measured in a working butchery, the Steakpedia Field Kitchen, not on a menu concept alone.

For restaurants

Beef programme. Which cuts to buy, from which origins and grades, in what format (whole primal, portion-cut, bone-in), and what each one really costs per usable kilo once trim and aging are counted.

Butchery and specifications. Setting up an in-house cutting room or a written portion specification for suppliers, with trade codes; yield testing and cutting sheets.

Grill. Designing and running a wood or charcoal grill: layout, fire management, a menu built around the grill, and staff training (see Steakpedia Training).

Floor and menu. Cut names in the local language, how to present origin, grade and aging accurately, portion sizes and pricing logic.

For importers and distributors

Importers and distributors entering a new market face the same naming problem as kitchens, multiplied: a cut sold under one name in the exporting country arrives under another on the menu. Steakpedia Advisory maps product ranges to local names and trade codes, explains grading systems to buyers, and reports what restaurant kitchens actually ask for and how they use each cut, so that ranges and specifications match demand.

It does not replace the official channels for market access, sanitary certification or import permits, which depend on each country's rules and on agreements between authorities; it works alongside them.
